Pillsbury Just Brought Back Its “Spooky Cat” Cookie for the First Time in 10 Years

I’m going to be honest with you: I don’t really care all that much about Halloween costumes. Wait, come back! I promise that I’m a fun person—but Halloween doesn’t have me under its spell until we start talking about M&M's and baking.

I love to geek out about the spooky-ooky treats that people whip up in the kitchen. There’s something ridiculously fun about how you can transform regular, everyday ingredients into creepy-but-adorable treats. Like, making spiders out of Oreos and pretzel sticks, turning flour tortillas into bats, or sticking googly eyes on everything. It takes serious kitchen ingenuity to create Insta-worthy Halloween treats with relatively low effort.

That's why I was elated to hear that Pillsbury is bringing back one of its all-time best Halloween sugar cookie designs: the Spooky Cat!

Why I’m Excited About Pillsbury’s Spooky Cat Cookies

This year, Pillsbury's Halloween lineup features the Pumpkin, Ghost, and Spooky Cat shapes. You know the pumpkin and ghost shapes, because they return as part of Pillsbury’s seasonal offering every year. But the spooky cat, with its signature arched back, has been missing from my Halloween rotation since 2015. Talk about a horror story.

I think the best way to enjoy the holiday-shaped cookies is by baking them into other treats to create a bit of a spooky dessert mash-up. I can't stop watching creators on TikTok, baking them into a giant brookie, layering them with Oreos and brownie batter for a triple threat, or squishing them onto another cookie for extra holiday fun. 

This Frankenstein-esque method of cramming many different treats into one über treat is everything that I enjoy about the Halloween spirit.

Ghost Brookie Cake 👻 This dessert is super simple to make and one the kids can help with from start to finish. It’s the perfect mix of brownies, cookies, and sprinkles ;) Ingredients * Ghost-shaped baking pan (mine is The Bake Shop by Masterclass Ghost Cake Pan- $6.99 at TJ Maxx) * Your favorite brownie mix + ingredients listed on the box (I used Ghirardelli) * Pillsbury Ready to Bake! Ghost Sugar Cookies * Halloween sprinkles Instructions 🎃Preheat the oven to 350°F. Spray your pan with baking spray (like Baker’s Joy). 🎃Prepare the brownie batter according to package directions and pour into the pan. Sprinkle with Halloween sprinkles. 🎃If your pan is shallow and bakes quickly, place the cookies on top before baking. If your pan is deeper, add the cookies halfway through to prevent overbaking. 🎃Cool completely before slicing into squares. The other reason I like baking sugar cookies with other sweet treats? It requires almost no effort for maximum “wow” effect. The Pillsbury Halloween cookies are already cut into 20 ready-to-bake pieces, so all you have to do is preheat the oven and set a timer.

Whether you enjoy them on their own or turn them into a monster mash-up dessert, it’s the spookiest way to celebrate Halloween.
