Jamie Oliver's Genius Trick for Crisp, Tender Brussels Sprouts

In the cruciferous world, steamed brussels sprouts are to roasted brussels sprouts like Clark Kent is to Superman. When steamed or boiled, they are boring at best. However, once roasted and seasoned, these vegetables transform into a side dish that's your dinner superhero.

I'm always looking for ways to up my roasted veggie game, so when I was thumbing through Jamie Oliver's 5 Ingredients Mediterranean cookbook, his recipe for Charred Brussels leaped out from the page. Not only is it made with five ingredients, but he uses a simple one-pan trick, too.

How To Make Jamie Oliver's Charred Brussels

Jamie's recipe calls for brussels sprouts, Greek yogurt, Parmesan, a lemon, and a couple slices of sourdough. There are three components: pan-roasted veggies, a thick, rich dressing, and quick homemade croutons.

It sounds complicated, but the entire recipe comes together in 20 minutes.

First, he tosses the brussels sprouts with olive oil, salt, and pepper, then sears them in a pan until they are tender with a crispy, charred crust. This only takes about 15 minutes, which is enough time to make the dressing—a simple combination of yogurt, grated Parmesan, and the juice from half a lemon.

Once the sprouts are crispy and out of the pan, he toasts cubed sourdough bread with additional olive oil for several minutes. I love how Jamie calls for grating a little more Parmesan over the croutons just before they're done to add a golden, salty flavor to each bite. (This is a great way to revive stale bread, too.)

Finally, it's time to assemble the dish. Smear the dressing on the bottom of a plate, then scatter the brussels sprouts and croutons over the yogurt along with a few extra shavings of Parmesan. Everything is finished with a flourish of olive oil and a pinch of salt and pepper.

After briefly admiring the beauty of this simple side dish, it can be served family-style. I love making these brussels sprouts alongside fish or roast chicken; however, I have been known to scoop myself a larger portion and call it dinner.
